Chicken breast with bacon and macadamia nut farce

Ingredients

  • 4 chicken breasts, with the skin and wing bone removed
  • 50gm Macadamia nuts
  • 1 rasher bacon, rind removed
  • 50ml cream

In a food processor put in the macadamia nuts and the bacon and process until finely chopped, add the chicken tenderloins process until the chicken has been chopped up a bit then slowly add the cream until the farce has a smooth firm texture. Scrape down sides of the processor bowl and process a bit more. Fit a straight piping tube into a piping bag. Fill the bag with the chicken mousse and pipe into each breast.

Seal the chicken breasts in a hot oiled pan until they are brown, then put in a hot oven (180°C) for about 20 minutes.

This dish is great served with a crisp salad.
