Char-grilled chicken breastmarinated in garlic

Ingredients

  • 4 Chicken breasts (skin on and upper wing bone in)
  • 1 lime
  • 2 clove of garlic (crushed)
  • 1/4 bunch fresh coriander 1/2 tsp Salt
  • 100ml olive oil

Grate the zest off the lime and put into a bowl, juice the lime and add to the zest, add the crushed garlic. Take the coriander leaves off the stalks, discard the stalks and roughly chop the leaves. Add the chopped leaves to the bowl along with the salt. Gradually mix the oil into the other ingredients. Put the chicken breasts into a dish with sides, pour the marinade over the chicken and turn the breasts over a couple of times to ensure they are coated with marinade. Let the chicken marinate. Preferably overnight but you can use it after marinating for only an hour.

Before you want to cook the chicken take out of the marinade and let the marinade drain off. After in has drained for a while put the breasts skin side down on the hot char-grill cook so you get a criss cross pattern on the skin, turn the chicken over and make a criss cross on the other side. Turn the grill down or put the chicken on a cooler part of the grill to let the chicken finish cooking.

This dish is great served with a crisp salad.
