Steak Diane

  • 1 steak
  • 10 ml oil
  • 10 gm butter
  • 1 clove of garlic - chopped
  • 1 tsp chopped onion
  • 30 ml brandy
  • 1 tsp Worcestershire sauce
  • 100 ml beef stock
  • 100 ml cream
  • salt

Heat the oil and 10 gm of butter in a good frying pan on high heat. When the butter foams and the foam subsides add the steak. Brown the steak on both sides then reduce the heat and cook until the steak is almost cooked, season with the salt and pepper. Remove the steak from the pan and keep it warm.

Add the onion and cook gently until it becomes transparent looking. Add the garlic and cook gently for 10 - 20 seconds. Add the brandy and let it reduce to 1/3 it's volume. Add the rest of the ingredients and reduce until it thinly coats the back of a metal spoon, this is called a sauce consistency. Return the steak to the pan to reheat and check the seasoning of the sauce.
